I thought it would be a great idea to share some recipes with you that I have tweaked so they are free from Dairy, Wheat & Gluten.

Billy Goat Stuff's Chocolate Buttons has been used in the recipes that contain chocolate.

We all love a pudding so I have started you off with Billy Goat Stuff Chocolate Brownies.

Billy Goats Chocolate Brownies

Chocolate Brownie

I normally cut this brownie into 12 nice bite size pieces

6"x8" baking tin lined with greaseproof paper.

Pre heat oven to: 180ºc/Fan Oven160ºc/350º f/Gas Mark 4


150g (6oz) Billy Goat Stuff plain chocolate buttons
100g (4oz) gluten & wheat free self raising flour
100g (4oz) dairy free spread or Goats' butter
3 eggs
200g (8oz) sugar

Firstly place the butter or spread into a saucepan with the chocolate buttons and turn the heat down low and gently melt the ingredients. Keep an eye on this as you do not want it to burn - give ingredients a stir every now and then.

While the butter and chocolate are melting, place your eggs into a mixing bowl and thoroughly beat the eggs together. Then add the sugar and flour to the eggs and give everything another good stir. (I find this mixture very easy to mix by hand rather than using an electric food processor).

Once the chocolate and butter have melted add this to your egg mixture in your bowl and give everything a final good mix.

Gently pour into your lined baking tin and put into a pre-heated oven for 30-35 minutes.

If using a fan assisted oven I find this recipe ready within 30 minutes.

Once the brownies are ready - remove and turn out onto a wire rack to cool.



Salmon Patties

Salmon Patties  

The amount of salmon balls produced depends on the size they are rolled into.

This recipe can be either fried or baked in the oven.

This recipe was given to my mum by an old friend, but the original recipe uses Matzo meal which is gluten based, so I have used gluten free breadcrumbs in place of this.

Pre heat deep fat fryer to 180°c - or Pre heat oven to 200°c


1 large tin of pink salmon (you can use red salmon if you prefer)
1 egg
1 large onion grated
1 tablespoon very finely chopped gluten free breadcrumbs
gluten free plain white flour


Empty the tinned salmon into a mixing bowl and using a fork break the salmon up into small flakes.

Add the grated onion and egg and mix everything together.  If you find the mixture is too wet then add some of the breadcrumbs to soak up the liquid.

Take small pieces of the salmon mixture and roll into small balls using your hands, and put to one side on a plate. Place the gluten free flour in a separate bowl and lightly coat each salmon ball with the mixture.

Place a small amount of the salmon balls into a deep fat fryer and lightly fry until golden.  This usually takes around 5 minutes.

If you are baking the salmon patties instead of frying them this will take around 20 minutes - check they are hot in the middle and golden brown.

Only place a few salmon balls into the fryer at a time, as overcrowding will reduce the temperature of the oil.

These can be served either as a hot or cold dish with a green salad.
